Summer is meant for grilling! This Chipotle Grilled Corn takes your regular corn on the cob to a whole new level. Bursting with flavours like fresh lime, chipotle, cilantro, salty feta or cotija cheese and a crispy char from the BBQ. It’s such a fun and easy side dish to enjoy this season.
Fresh corn on the cob ROCKS. But we only get a few weeks a year to enjoy the good local stuff! That’s why I knew I needed to get you this recipe quickly, so that you can give this total flavour bomb of a side dish a try. A little sweetness and crunch, complimented by a bit of smokey char, what could be better?!
How To Grill Corn
Grilling corn is must easier that it seems. For a quicker method just fully shuck the corn and get it on the hot grill!
- Shuck the corn completely, or partially shuck the corn (leaving the husks attached at the end) and remove as much of the silk (strings) as you can. If you leave the husks on, let the husks soak in water for 30 minutes before grilling (or they will basically light on fire!).
- You can boil the corn before grilling for around 5 minutes if you want to shorten the grill time or want a juicier grilled corn!
- Preheat grill to high. Once hot, add corn and cook, turning often (so stay close!) until charred on all sides, and are steaming hot and tender.
What is Cotija Cheese?
According to Bon Appetit: Cotija is a Mexican cow’s milk cheese named after the town of the same name in the state of Michoacán. It’s white in color, firm and dry in texture, and salty and milky in flavor. When it’s younger (as in, aged for a shorter amount of time), its texture is akin to that of feta: moist and crumbly. And when it’s older (aged for longer), it becomes sharper and firmer, more similar to Parmesan. While ricotta salata is sometimes suggested as a substitute, Cotija has a distinct funk that can’t be so easily replicated. We used feta as the suggested cheese here, but if you can get your hands on some Cotija cheese (harder to find) give it a try!
Summer Side Dishes

Ingredients
- 2 tablespoons mayonnaise
- 1 teaspoon chipotle hot sauce
- 1 teaspoon lime juice
- ¼ to ½ cup feta cheese (or cotija)
- Chopped cilantro (garnish)
- 4 corn on the cob

Mix chipotle, mayo and lime juice together and brush onto the hot corn on the cobs. Top with feta or cotija cheese and cilantro and enjoy!
