I’m pretty excited about this Grilled Corn Pasta Salad, that is loaded with grilled corn, arugula tomatoes, avocado and pasta with a zesty Lime Crema dressing. This will be on repeat and is definitely the star of the show at your next BBQ.
I adore fresh corn, and local cobs are plentiful this time of year whether its local fruit stands or markets (or in your own garden if you’re lucky!). Adding grilled corn to a salad is a great way to enjoy corn because you get fresh pops of sweetness. Oh and trust me, fresh corn beats frozen in this recipe any day!
How to Grill Corn
Grilling corn is actually so simple! If you plan to do it with the husks on, you will NEED to soak the husk in water. This keeps them from burning. A second option for cooking corn on the grill is to remove the husk entirely! This method quick and easy. I find grilling corn adds great char and smoky flavour to dishes.
To grill corn, place on your hot grill, turning to a new side every few minutes until hot and tender with nice char marks. I have had better success with corn the has been boiled for a few minutes first (especially if it isn’t young corn) but the choice is yours.

Grilled Corn Pasta Salad with Lime Crema Dressing
Another summertime salad is here! Pretty excited about this Grilled Corn Pasta Salad with a zesty Lime Crema dressing. This will be on repeat and is definitely the star of the show at your next BBQ.
Ingredients
For the Dressing
- ½ cup sour cream
- 3 tablespoons mayo
- 1 lime juiced and zested
- ½ teaspoon garlic powder
- 1-2 teaspoons taco seasoning
- Pinch of salt & pepper
For the Salad
- 3 cups cooked pasta
- 2 corn on the cobs cooked/grilled and cut off cob
- 2 cups packed arugula
- ¼ cup diced red onion
- 1/2 cup baby tomatoes cut in half
- 1 avocado
- ¼ cup feta cheese
- Optional fresh cilantro (garnish)
Instructions

In a small bowl, whisk together all dressing ingredients and set aside.

Remove husks from the corn, parboil if desired, and cook on the grill rotating each side every few minutes until corn is cooked, tender and lightly charred. Remove from the grill and cut of the cob.

In a large salad bowl, layer in your arugula, red onion, tomatoes, avocado, feta cheese, grilled corn and cooked pasta. Top with the dressing and mix to combine. Enjoy cold!

Very delicious! Made this for dinner last night and used mixed greens (including kale and arugula). Big hit even my pickiest eater enjoyed it.
