With Cinco de Mayo right around the corner, I thought I would share some of my favourite Mexican dishes that we are head-over-heels in love with in case you feel like celebrating at home this year…. pass the freshly-squeezed Mixed Citrus Margarita!
Two years ago for Charles’s birthday we threw him such a fun party with lots of tacos, beer, and paired it with some very bright decorations (haha, my house was in shock). It was the perfect way to celebrate Cinco de Mayo and his birthday with our friends and family… I know we all miss our people.
Since we aren’t all getting together, I figured we would make the best of our time as a family and cook up some of our fav dishes anyway; here are some recipes to get you in the mood!
If you have the cookbook it’s the perfect time to whip up the Vegan Queso (so good!!), the Big Burritos or the Cauliflower Tacos.

Cinco de Mayo Recipes
Breakfast Taquitos
Start your day off strong with these delicious Breakfast Taquitos! Filled with black beans and chorizo (or vegan chorizo), they’re packed with flavour … and there’s even some hidden kale in there. If you’re missing a couple ingredients you can get creative, there’s really no way to go wrong with these!
Shrimp Avocado Salsa
The perfect afternoon snack, this Shrimp Avocado Salsa is light and refreshing. The citrus really helps bring out the flavours of the shrimp and avocado; serve it with some tortilla chips and watch it disappear!
Mixed Citrus Margaritas
These Mixed Citrus Margaritas are a breeze to whip up and perfect to enjoy on a hot sunny day, or even just in your kitchen while you’re making dinner. Hey, we won’t judge you either way, these are ridiculously good!
Tissue Paper Pom Pom Garland
If you’re twiddling your thumbs in the house and looking for a fun little DIY with the kids look no further than this Tissue Paper Garland. You can string these beautiful tissue pom poms together or they make a fun little centrepiece too! They require a little bit of patience so maybe make yourself one of those Mixed Citrus Margaritas first lol!
Cheryl’s Famous Guacamole
A classic, guacamole has got to be one of my favourite snacks! I got this recipe from my friend Cheryl and it’s killer. She’s always the life of the party… and I think her guacamole has everyone hooked!
Pico de Gallo
It’s hard to go wrong with Pico de Gallo, which is a fresh salsa. You could always buy a store bought one but this recipe is so easy and only takes a few ingredients; there’s simply nothing better than homemade!
Quick Pickled Red Onions
Possibly one of the most underrated condiments, you’ll always find a jar of Pickled Red Onions in our fridge. They add so much flavour to dishes and are the perfect accompaniment to your Cinco de Mayo tacos.
Mexican Chipotle Sauce
This sauce is packed with flavour and adds so much dimension to your tacos! It’s a little spicy so kids beware, it comes together so easy and any extras you have can be kept in the fridge or the freezer.
Home-made Corn Tortillas
If you realllllly want to up your game this Cinco de Mayo make your own tortillas, I promise it’s not that difficult! We love to make cooking an activity in the family and the kids can help here, just be careful with the tortilla press we don’t want any squished fingers!
Shrimp Tacos with Avocado Crema
Tacos are no joke in our family and these shrimp tacos have got to be one of my favourite recipes. The shrimp get a nice cajun coating and pair so nice with the apple coleslaw. Trust me, your tastebuds will thank you!
Jackfruit Carnitas
If you’re looking for a vegan taco option this is your recipe! There is no compromise in flavour here, you get a nice smoky BBQ flavour and that same delicious Apple Coleslaw! This particular recipe leverages pre-marinaded jackfruit which makes them one of the world’s easiest dishes to pull together!
Cowgirl Salad
A tried and true favourite, you can never go wrong with this cowgirl salad (think of the Earl’s Santa Fe Salad – it’s a doppelgänger). I absolutely love salads that double as meals and this is the ultimate dinner salad! There’s an option to make it with tofu or chicken and it’s topped with a delicious honey lime vinaigrette. My mouth just started watering, it’s SO GOOD.
Tequila Lime Cheesecake
Okay, if you’re going to make anything out of this blog post, this is i! What better way to wrap up your Cinco de Mayo than with a little cheesecake? We made a vegan one that is so creamy and has the perfect level of sweetness, or if you’re looking for something a little more traditional (and indulgent!) then this cream cheese based one (pictured here) is your best bet!
