Get ready for a restaurant-quality fritter, bursting with summer sweet fresh corn, spicy jalapeños, and a handful of cheese for good measure. The whole situation gets levelled up with a tangy Garlic Aioli that I recommend dipping (or drowning) the fritters in. Chef’s kiss, my friends!
What is a Corn Fritter
Simply put, a corn fritter is a fritter with corn in it, and a fritter is fried dough with or without anything inside it. Fritters can be sweet (think: apple fritter) or savoury like this one. While I would love to say that you can air fry or bake these, I can’t. The batter for these fritters is simply too wet to do anything other than fry these. Remember to always be careful when frying and use things like an oil guard make a big difference too!

Jalapeño Corn Fritters with Garlic Aioli

Ingredients
For the Fritters
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 cup shredded cheese (I used white cheddar)
- 2 garlic cloves minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon onion powder
- 1/2 cup milk (I used 2%; plant-based works)
- 1 egg, beaten
- 2 cups corn (approx. 2 cobs)
- 2 diced seeded jalapeños (approx. 1/2 cup)
- 1 tablespoon chopped chives
- oil for frying
For the Garlic Chive Aioli
- 1/2 cup mayonnaise
- 2 tablespoons fresh lemon juice
- 4 garlic cloves minced
- 2 tablespoons chopped chives
- salt & pepper to taste
Instructions
For the Garlic Chive Aioli

Combine all ingredients in a bowl until smooth. Refrigerate until ready to serve alongside fritters for dipping.
For the Fritters

In a large bowl combine the flour, baking powder, cheese, garlic, salt, pepper, paprika and onion powder. Pour in the milk and beaten egg, mixing until combined. Stir in the corn, jalapeños, and chives.

Heat approximately 1-2 inches of oil in a large skillet over medium-high heat (or fry in a deep fryer). Use a tablespoon (or similar) to drop batter balls into the oil. Fry until golden on both sides, about 2 minutes per side. Remove from the oil with a slotted spoon and place on a wire rack or a plate with paper towel. Serve warm with the Garlic Chive Aioli for dipping.
