What better way to use up that zucchini from the garden than with these Zucchini Bread Pancakes? The heart shaped butter is optional of course, but such a sweet way to tell someone you love them. I just used a little heart shaped cookie cutter to make them and kept them cold.

These muffins are moist and healthy and filled with blueberries. Make them ahead and freeze them for an easy breakfast!
This chia pudding is one of my favs – it’s healthy, you can make it ahead of time, and it reminds me of my childhood! If you’re not a PB&J kind of person try this Orange Creamsicle version – it’s soooo yummy! All of them are gluten free and vegan to boot!
I love the fact that these are made with phyllo pastry – a bit lighter and not as much fuss! You can use almost any veggie you have in the house (broccoli, red pepper etc).
