How To Make Egg Bites
These egg bites come together quickly! Re-purpose leftover pancakes, cook and slice breakfast sausages, whisk eggs with a touch of cream and maple syrup, and layer everything into muffin tins: sausages, cheese, and pancake pieces. Pour the egg mixture overtop and bake in a water bath for a soft, fluffy texture. Once cooled, store them in the fridge for easy breakfasts all week!
Note: this recipe leverages leftover pancakes. My go-to are my infamous Angel Cakes, but any pancake will do.

McGriddle Egg Bites
If you love the sweet-and-savory magic of a McGriddle, but want a healthier, make-ahead version, these McGriddle Egg Bites are for you! Packed with fluffy eggs, a touch of maple syrup, pancakes, and savoury sausage, they’re the perfect grab-and-go breakfast.
Ingredients
- 4 breakfast sausages
- ½ cup shredded cheddar cheese
- 2 pancakes, cut into ½" pieces
- 8 eggs
- 2 tablespoons 18% cream
- 1 tablespoon maple syrup plus extra to serve
Instructions

Preheat the oven to 350 F and grease 8 cups of a muffin tin. Fill a rimmed baking sheet halfway with water and place in the oven.

Heat a frying pan over medium-high heat. When the pan is hot, add the breakfast sausages and cook until golden brown and cooked through, around 5 minutes, turning occasionally. Remove from the pan and cut into thin slices.

Whisk the eggs with the cream and maple syrup.

Evenly distribute the sausages, cheese, and pancakes among the muffin tins. Pour the egg mixture on top, dividing equally among the muffin tins.

Carefully place the muffin tin on the baking sheet (it will sit in the water) in the oven. Bake for 16-20 minutes, until the eggs are set. Remove the egg bites from the pan and set aside to cool before placing them in an airtight container in the fridge until ready to eat! Store in the fridge for up to 5 days.


I just made these, and they are truly delicious! The slight changes I made was soaking the pancakes with the syrup instead of putting the syrup in the eggs, putting the eggs in the blender with a 1/4 cup cottage cheese instead of the heavy cream, and dividing into 12 instead of 8 muffins!
