Peanut Butter Cup Chickpea Brownies (Gluten Free)

Peanut butter cup chickpea brownies

You know those moments when you have a stroke of brilliance that comes out of absolutely nowhere? I had one the other night.  And these chickpea brownies were the result.

With three of those delicious Justin’s Peanut Butter Cup packages staring at me and the Old Mother Hubbard nursery rhyme in the back of my head (we are moving, and have pretty much no food in the house), I figured I would make us a little treat with what little I had kicking around.  So, chickpea brownies it was, and since everything tastes better with chocolate and peanut butter, I figured I would chop up a few of those Justin’s beauties and throw them on top of the brownies for kicks. And am I ever happy I did!

Now, I’m not saying you should have these for breakfast, lunch and dinner.  They are after all a ‘sometimes’ food as we would put it in our house.  But if you’re going to reach for a treat I would say these are a good choice!

Peanut butter cup brownies

Whip these up in a blender in 5 minutes and throw them in the oven.  You won’t regret it.

Ingredients:

  • 1 large 14 oz can of chickpeas, drained and rinsed
  • ½ cup cocoa
  • ¼ tsp. salt
  • 2 eggs
  • 1 tsp. vanilla
  • ½ cup brown sugar
  • 2 Tbsp. honey
  • 2 Tbsp. milk or coconut water
  • 1 tsp. baking powder
  • ¼ cup melted butter or coconut oil
  • 3 packages Justin’s white chocolate peanut butter cups, roughly chopped

Directions:

  1. Preheat oven to 350F and line a 9″x 9″ baking pan with parchment paper.
  2. Combine all ingredients except the peanut butter cups in a blender and mix until smooth.
  3. Pour the batter into the prepared pan, sprinkle with the chopped peanut butter cups, and bake for approximately 40-50 minutes or until the brownies are set.
  4. Remove from the oven and let it rest in the pan for at least 20 minutes before cutting.

    I would have never thought to add chickpeas to brownies, but these look absolutely divine! Delicious and healthy(er), can’t beat that 🙂

    I made these for mother’s day and they were so so so good! I didn’t have any Justin’s Peanut Butter cups, so I just made my own with dark chocolate and peanut butter 🙂 I can’t wait to make them again!

    Hi Tori, any substitutes for the peanut butter cups? I live in Australia so unfortunately we can’t get the same as what you have suggested in the recipe!

      Hi Nadine, I don’t know what you have at your fingertips in Australia but you could substitute any of your favourite high end chocolate and it should work. Would love to hear what you end up adding!

    My son LOVES these. Although we make two batches in our house – one with chocolate chips for the boys and one with the peanut butter cups for the adults;) I also wanted to try toffee pieces. Only question is are they usually high than traditional brownies? I found mine didn’t rise very much.

Thinking about them a lot these last few days. I’ve been reading the book ‘Untamed’ by @glennondoyle (have you read it? love to hear your thoughts), and it’s made me really think. My last post was sharing our story of my dad’s journey with  Alzheimer’s. We are so lucky to have him at such an early stage of the disease, fully himself.  He is such a gift to us and the world. In sharing this story a floodgate of touching yet heart-wrenching stories poured in.  My heart expanded and broke at the same time. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Jillian posted something about high functioning anxiety the other day, and I checked most (ok all) of those boxes ... ugh.  The irony is that I live a lot in the future, a little busy body, not really taking the time to enjoy the present - but one day, should I have the same disease as my dad (50% chance), I will truly only have the capacity to live in that moment.  It stopped me dead in my tracks. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Travels with this crew... 🤍
My parents & Jillian’s (our moms are sisters) have always travelled together and have had THE MOST incredible adventures (our dads are ridiculously witty - literally the funniest humans). Looking back I can guarantee that those are some of their best memories.
I’m so grateful that we got to do the same last year - I can’t wait for another trip!  And might I say that I wish I was eating my lunch in this spot today!  Thank you again @nimmobayresort

I don’t do resolutions but love having a word to guide my year - I’m having a hard time picking just one this year. I think I got this idea from my friend @jenniferwilson.co ⠀⠀⠀⠀⠀⠀⠀⠀⠀
While being focussed and more organized is always on my list, they don’t really seem to feel right.  With the boys growing so quickly and the reality of aging sinking in, especially with my dad having Alzheimer’s, I feel that time has never been more precious. I’m always finding myself trying to fit one more chore in or sneak in that extra email ... but really, why?  This will be the year of more snuggles for me, more campfires, glasses of wine with my loved ones over good food ... more memories. I worry that one day soon Charlie won’t want to snuggle me and it breaks my heart. 

I took a break from being on IG stories over the holidays and it was such a gift - I love being on the platform but there sure is a balance between being ‘on’ and being present. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I think this year my word will be FAMILY ⠀⠀⠀⠀⠀⠀⠀⠀⠀
