This Prosciutto Melon Salad is so light and refreshing! Stunning to look at and even better to eat, the pairing of three varieties of melon with cured prosciutto and creamy bocconcini on a bed of crisp arugula, makes for a great sweet and salty combo.
Hot days are here, and nothing beats a refreshing meal that skips sweating it out in front of the stove. That means…. make way for summer salads! Simple to throw together (which is great during busy summer days full of activities), healthy and perfect for enjoying at home or even on the go (hello Mason jar salads).
If you haven’t tried the combination of prosciutto with melons like cantaloupe, honeydew or watermelon, you are in for a treat! I used a melon baller to get perfect shaped melons that matched my bocconcini but by all means, chop, slice and dice your fruit in any shape you wish! It doesn’t have to be fancy.

Prosciutto Melon Salad
Prosciutto Melon Salad
This compltely refreshing salad is like a work of art and is fabulous for entertaining! Add spiced pecans for some extra crunch (the ones in our cookbook Fraich Food Full Hearts are epic if you have the book!).
Ingredients
For the Salad
- 4 cups baby arugula
- 1/2 small cantaloupe, in small balls (use melon baller)
- 1/2 small honeydew melon, in small balls (use melon baller)
- 1/2 small watermelon, in small balls (use melon baller)
- 8 slices prosciutto
- 200 grams small bocconcini
For the Vinaigrette
- 1/4 cup olive oil
- 2 teaspoons apple cider vinegar
- 1 tablespoon honey
- pinch of salt and pepper
Instructions

Whisk all of the vinaigrette ingredients in a small bowl and set aside.

Combine all of the salad ingredients. Layer in the arugula, cantaloupe, honeydew, watermelon, prosciutto pieces and bocconcini. Pour the vinaigrette over salad, toss and enjoy!
