I have been wanting to make coconut chia seed pudding for ages, and now I’m wondering what took me so long. What an EASY and yummy treat! Chia seeds, a well-known ‘Super Food,’ are packed with fibre, omega-3’s and protein. Really, a Dietitian’s dream. They have a gel-like quality that gives them natural thickening properties, with no cooking needed.
This pudding takes a mere 5 minutes to whip up (ok, a bit more time to set up) and I promise that nobody will even know how healthy it is.
Ingredients:
- 1 can lite coconut milk (398 ml)
- 1/2 tsp. vanilla extract
- 1/4 tsp. coconut extract
- 2 heaping Tbsp. honey
- dash of nutmeg
- 1/4 cup chia seeds
Directions:
- In a medium bowl, stir together the coconut milk, vanilla extract, coconut extract, honey and nutmeg. Stir in the chia seeds.
- Refrigerate for an hour (or longer) and serve.
- Top with granola, berries, pineapple or toasted coconut…sky is the limit!

What exactly does the simmering of the coconut milk do? All the other chia pudding recipes I’ve seen just stir everything together and refrigerate.

I found that there was some coconut oil that solidified, so heating it melted the oil to make it smoother.

Hi! I would say it’s safe to keep in the fridge for a couple of days just using general food safe guidelines!
