I’ve rounded up some Skillet Fajitas, the best Pancake Mix, homemade Trail Mix and homemade Graham Crackers for s’mores.
I spent my childhood camping, so it’s safe to say that camping holds some of my best memories. We are just (finally) finishing up our camper renovation and I can’t wait to get back out there! In the meantime we thought it would be fun to share some of our favourite recipes to take camping for fuss-free fun meals.
Easy Camping Recipes
I love the BBQ just as much has the next girl, but it’s time to change it up people! That’s why for this menu I wanted to show you other ways to whip up easy dishes full of flavour, even while camping.
Homemade Pancake Mix
Nothing makes campers happier than waking up to pancakes (and coffee… something about the smell of coffee camping)!!! We love making pancakes to start our day and stacking them up with fresh fruit and a drizzle of maple syrup. The beauty of this dry pancake mix is all you need to add is buttermilk, melted butter and eggs!
If you have a jar big enough you can just whisk the wet ingredients together, add them to the jar and give it a shake! Or just mix it in a bowl and away you go. My famous Angel Cakes are now easily a part of your camping mornings. Head HERE for the full recipe, then premix all dry ingredients in a jar ahead of the trip. I like using powdered vanilla sugar to replace the vanilla so that I can mix it right into the dry ingredients: Oetker makes a 9 gram package found in the baking aisle that works great (no need to adjust the rest of the recipe)! I mean, you could mix the wet ingredients together separately in advance too (just add the butter at the end to avoid it clumping) to make your life that much easier and simply combine right before using.
Camping Trail Mix
Snacks are essential when camping and this take on a trail mix is super tasty and fun. The mini marshmallows are a nod to s’mores of course and completely optional! But at its core, this mix is full of healthy nuts, dried cranberries and little pops of chocolate for a filling snack during those long days of adventuring.
Camping Trail Mix
Ingredients
- 1 cup roasted peanuts
- 1 cup raw or roasted almonds
- 1 cup dried cranberries or raisins
- 1 cup roasted cashews
- 1/2 cup mini marshmallows (optional)
- 1/4 cup mini chocolate chips
Instructions

In a large bowl, add in all ingredients and mix to combine. Transfer into a container with a lid and store until ready to enjoy!
Skillet Fajitas
Skip the burgers and hotdogs and try some easy Skillet Fajitas instead! By easy I mean E-A-S-Y! This one pan dish is so great for sharing and can be cooked on your BBQ, stove or over the fire in a cast iron skillet. Pack along some tortillas and all your crew’s favourite toppings.

These Skillet Fajitas are the perfect one pan dish for sharing and can be cooked on your BBQ, stove or over the fire in a cast iron skillet on your next camping trip! Prep the mixture ahead in a large resealable bag or container to make these even easier. Substitute sliced portobello mushrooms for the chicken to make it vegetarian.
Ingredients
- 1 tablespoon oil
- 3-4 sliced boneless skinless chicken breasts*
- 2 sliced bell peppers
- 1 sliced yellow or sweet onion
- 2 tablespoons taco seasoning
- 2 tablespoons cilantro
- lime wedges (optional)
- flour tortillas (small or large)
- shredded cheese, guacamole, sour cream etc.
Instructions

Combine sliced chicken, bell peppers, onion and taco seasoning in a large bowl and mix together.

Heat a large skillet or frying pan over medium high heat with the oil. Once hot, add in the chicken, onion, peppers and seasoning mixture. Pan fry until chicken is cooked through and the veggies have softened and lightly browned. Remove from the heat.

Top with fresh cilantro and a squeeze of lime juice (optional), and serve with all desired toppings and flour tortillas!

Tip: Make sure if you mix all your wet ingredients ahead of time- don’t add the butter! If you mix melted butter in, then store in your cooler, the butter will harden again in little clumps. Made this mistake a couple times 😛

Hi Naomi that’s a good point! I find it’s ok if it hardens into little clumps but if it was one big clump that would be an issue!
